Zoodle Spaghetti Bolognese
So my biggest weakness when it comes to food is CARBS! I absolutely LOVE them and would live off of pasta, bread and potatoes if I could, however the fitness/health guru in me refuses to allow it. I don’t even think it’s actually so much the carbs alone that I love, but it’s all the recipes that they tend to be part of, which taste so amazing.
So due to having a stronger love towards abs then starches, I like to create and cook healthier low carb alternatives to some of my favourite comfort foods. I really love how much vegetables like zucchini and cauliflower are being utilized as starch replacements because honestly, I don’t love how I feel after a big bowl of pasta… I always feel so heavy, bloated and tired. But with recipes like this one, I feel satisfied without all the unbuttoning of my pants to breath! The best part is that I actually like the taste more too!

1 lb, extra lean ground beef
3 medium zucchini
2 small onions, chopped
1/2 red bell pepper, chopped
1 cup mushrooms
1 tsp minced garlic
1-1.5 cup tomato pasta sauce
1/2 tsp oregano
1/2 tsp italian seasoning
1/2 tsp basil
1/2 cayenne (optional)
1/2 tsp pepper
Before anything I spiralized each zucchini and places the zoodles into a large bowl.
I then got a large skillet going to a medium heat.
Once it was heated up, I placed in my extra lean ground beef.
While the beef was cooking I chopped up my onion, and bell pepper. Afterwards I placed them in the bowl of zucchini, with the mushrooms to follow.
Stir your beef around until it's almost cooked all the way through.
Once you're beef if almost cooked entirely, set it aside in a bowl. In that bowl of beef, place in all of your seasonings.
Pour majority of the leftover beef fat out of your skillet, but save about 2 tablespoons of it.
In that same skillet, add your minced garlic into your pan with that small amount of leftover beef fat. Let your garlic cook for almost a minute, and then place your bowl of zoodles and vegetables into the pan to fry up. Saute your zoodles and veg until they are hot and soft to eat.
Once they are to your chosen texture, place in your beef and tomato sauce. Stir everything in and place a lid over the skillet to let everything marry together for a couple of minutes.
I sprinkled my zoodles with a little bit of fresh parmesan, and voila, it's ready to eat! This is one easy and quick recipe to make. Yum yum!
