Lean Turkey Muffins
I've been cooking turkey muffins for YEARS and they never get old to me. They taste different almost every time that i've cooked them because I like to change things up, and i'm not much of a 'measurer'. However, I really wanted to create and share my most simple recipe possible because life is so hectic and busy!
I am going to the cabin this weekend and I really want some healthy options on hand to prevent eating processed garbage food. If you want an easy healthy recipe that will simplify your life, and keep your health on track, try these out!!
1 yellow bell pepper
1 small white onion
4 celery stalks
2 packs of extra lean ground turkey (2 lbs total)
2 tsp minced garlic
1/2 cup liquid egg whites
1 cup quick oats
black pepper to taste
oregano to taste
parsley to taste
basil to taste
Ketchup or sriracha *optional
Preheat oven to 375 degrees. Finely chop your bell pepper, celery and onion.
Mix together your oats and extra lean ground turkey.
Fold in your finely chopped onion, bell pepper and celery into the bowl with the ground turkey and oats. Pour in your egg whites, and add in your garlic and seasonings to taste.
Mix everything thoroughly with clean hands. Afterwards prepare your muffin pans with a non stick spray.
Take racquetball sized portions of the mix in your hands, roll it around and place your turkey ball into the muffin pan. Continue doing this until you've used up all of your mix.
Once you have finished placing all of your muffins, poke a hole in the centre of each muffin with your finger tip to place ketchup or your preferred sauce inside. This is optional.
Place your muffins into the preheated 375 degree oven for about 40 minutes.
Once they're done, let them sit and cool for about 5 minutes.
You should find these turkey muffins to taste amazing and flavourful, I absolutely love them! Since extra lean ground turkey is so lean, adding the vegetables really helps these muffins maintain their moisture!
