Peanut Butter Protein Cookies

I'll be honest, I don't have much of a sweet tooth. I know, weird right? A woman who doesn't have a sweet tooth!

 

Well, once in a while I have the odd craving for something sweet, but not too sweet and usually it involves peanut butter... I LOVE peanut butter!

 

So Last night I was thinking to myself, 'why haven't I created a peanut butter protein cookie yet?' so obviously I got right on it.

 

Peanut butter cookies are one of the easiest cookies in the world to make, and this recipe is even easier than the typical because it literally has only 4 ingredients!

 

You're probably thinking that because this recipe is a healthier option, it won't taste as good, well... guess what?! It tastes better and the texture is perfect!

 

 

Here's your 4 ingredients:

 

Protein Powder - Egg Whites - Truvia - Creamy Peanut Butter

 

 

Easy enough right? Let's get started.

 

Prep time: 5 minutes

Total time: 15-20 minutes

Difficulty: Too easy!

Servings: 10-12 cookies

Ingredients:

  • 1 cup creamy peanut butter (stick to low sugar/ low sodium brands)

  • 3 packets of Truvia sweetener

  • 2 scoops of vanilla or cookies & cream whey protein powder (stick to no or low carb)

  • 1/2 cup of egg whites

Instructions:
  1. Preheat oven to 350 degrees.

  2. Line a baking sheet with parchment paper or foil.

  3. Combine all of your ingredients until smooth. If it's too liquidy add a little more protein powder, or if it's not creamy enough, add a little more peanut butter.

  4. Scoop out a large tablespoon of your mix, roll it into a ball in your hands, and place them onto your lined pan until you've used up all of your mix. I had 11 cookies total made in this batch, your count may be different.

  5. Once they've all been placed, use your palm to press each cookie ball into a cookie shape.

  6. Afterwards press the tops with a fork to give them that classic peanut butter cookie look!

  7. Bake in the oven for about 10 minutes. Don't forget to set a timer.

  8. Remove from the oven, let them sit for a couple minutes to cool, then place onto a plate to cool even more. Voila, you're done! They are SOOOOO good, enjoy!
