I went over to my boyfriends parents house for a visit and their tree had uncountable amounts of apples. They can't get rid of them fast enough, so lucky for me, I got to take a huge bag of them!
I was brainstorming recipes that could incorporate the apples, and the recipe I am about to share with you, turned out perfect. They are so good that I am going to make a few more batches tomorrow and freeze them!
These muffins are no guilt and they're so easy to make due to the very simple ingredients. I'm totally going to use this as an oatmeal alternative with my eggs in the morning.
2 cups quick oats
1 teaspoon baking powder
1/2-1 tsp cinnamon or pumpkin pie spice
1 cup skim milk
1 small mashed banana
1 large or 2 small apples, peeled and chopped
1 handful raisins (optional)
1 tsp of stevia (optional)
Step 1: Preheat oven to 375 degrees.
Step 2: Peel, core, and chop up your apple into small cubes.
Step 3: Grab a large bowl, place in all of your ingredients, mix them up well, then afterwards fold in your apples.
Step 4: Grab a muffin tin and place your mix about 1/2 to 3/4 full in each cup.
Step 5: Place in over for about 25 minutes
Step 6: After your muffins have finished cooking, set them aside to cool down for about 5-10 minutes. Next take a butter knife and lightly glide it around the outside of your muffins to loosen them up from the tin. They are now ready to serve, or store in your fridge or freezer for later. You won't be disappointed, they're absolutely delicious!
